Fair Trade Chocolate Coffee Cookies

INGREDIENTS

2 cups flour

½ cup Fair Trade Belgian cocoa powder

2 tbsp finely ground Fair Trade Coffee

1 tsp baking soda

1 tsp La Baleine Fine Sea Salt

1 cup butter at room temperature

½ cup granulated Fair Trade cane Sugar

1 cup Fair Trade light brown sugar

2 eggs

2 egg yolks

1 ½ tsp Fair Trade vanilla extract

2 cups Fair Trade chocolate chips

1.5 cups roughly chopped walnuts

Prepare this recipe using our If You Care Parchment Baking Paper.

PREPARATION

Mix together all dry ingredients: flour, cocoa powder, ground coffee, baking soda and salt.

In the bowl of an electric mixer, cream together butter, granulated cane sugar and light brown sugar until thoroughly mixed. Then add both eggs and vanilla and mix until smooth. Adjust mixer to a lower setting and add the flour mix a little bit at a time.

Add in chocolate chips and walnuts and be careful not to mix too much.

Preheat the oven to 350 degrees. Line a baking sheet with a piece of If You Care Parchment Paper and set aside. Measure out evenly sized dough balls and stack them on a plate or large bowl and place them in the refrigerator for 30 minutes to an hour. Remove the dough and place evenly (about 2.5” apart) on the sheet of If You Care Parchment Paper.

Bake for 15-17 minutes, cool and enjoy!
