1 Buddha’s Hand, thin strips skin removed with a vegetable peeler

1 cup water

3 cups sugar, plus more for sprinkling

6 oz dark chocolate, melted


Boil buddha’s hand peels twice, then add sugar and water to the pot and boil on medium for about 35-45 minutes.Remove peels and place them on a cooling rack sitting on top of If You Care Waxed Paper, then sprinkle with sugar until lightly coated and allow to cool.

Once cooled, dip ½ of each peel in melted dark chocolate and allow peels to rest on a pan or large plate lined with If You Care Waxed Paper. Chill for about 1 hour, then serve or store in an air tight container for two days.
