Makes 2 sandwiches
1. Halve the croissants making sure to keep both sides intact and creating a pocket, then set aside.
2. In a small bowl, whisk together the mayonnaise, lemon juice, and old bay seasoning, then add in the celery and chives.
3. Heat a small pan over low heat with the table spoon of butter. When the butter is melted, add the lobster meat and sauté until completely covered in the butter.
4. Spread the mayonnaise mixture inside the croissant, then top with the lobster meat. Place in an If You Care Paper Snack and Sandwich Bag for a grab-and- go lunch!
