1. Melt dark chocolate using a double boiler or microwave, then stir in 2 tsp peppermint extract. Pour dark chocolate mixture into a rimmed baking sheet lined with If You Care Parchment Paper.
2. Place chocolate cookies in a single layer pattern over dark chocolate, then set aside.
3. Then melt the white chocolate and stir in 2 tsp peppermint extract and ½ the crushed candy canes and pour over the dark chocolate and cookies. Sprinkle remaining crushed candy canes over the white chocolate and allow pan to chill at least one hour.
4. Break apart peppermint bark and serve or store in If You Care Snack and Sandwich Bags.
