Roasted Halibut with Lemon and Capers


1lb halibut

salt and pepper, to taste

1 shallot, thinly sliced

2 tbsp Columela Extra Virgin Olive Oil

1 tbsp Peloponnese Capers

1 tbsp fresh thyme

3 tbsp dry white wine, we used Sauvignon Blanc

½ tsp red pepper flakes

Prepare this recipe using our If You Care Roasting Bags.


Serves 2

1. Preheat oven to 400 degrees F.

2. Place the sliced shallots inside the center of an If You Care Medium Roasting Bag with the seam side up and place on a baking sheet. Season the halibut with salt and pepper, then place on top of the shallots.

3. In a small mixing bowl, whisk together the olive oil, white wine, thyme and red pepper flakes, then pour on top of the halibut inside the roasting bag, adding the capers last.

4. Fold the open end of the bag tightly towards the top as many times as possible to seal and place in the oven for 25 minutes. Carefully open the bag by cutting down the center seam and cutting your halibut in two portions. Serve over sautéed spinach or rice, making sure to pour remaining juices in the bag over the fish.
