1. Preheat the oven to 275 degrees.
2. Remove the large stems from the kale, then wash and dry thoroughly.
3. In a large bowl, whisk together all the sauce ingredients, then add kale. Using your hands, thoroughly coat the kale with the sauce, making sure to evenly distribute.
4. Line a baking sheet with If You Care Parchment Paper and lay the kale on top in a single layer (a little overlapping is ok since the kale will shrink). Sprinkle with a pinch of coarse sea salt and place in the oven for 30-35 minutes. For this step, it is best to bake in batches so the kale chips bake evenly throughout. You can easily reuse the Parchment Paper for the next batch.
